Cheesy Breakfast Bread Pudding
Ingredients:
- 16 ounce Sausage
- 1 Small Yellow Onion, Fine Dice
- 8 Potato Rolls
- 3 cup Half And Half
- 6 Whole Eggs
- 3 cup Cheddar Cheese, Shredded
- 2 tablespoon Fresh Sage, Minced
- 2 tablespoon Fresh Chives, Sliced
Directions:
Heat a skillet over medium high heat and brown the sausage, breaking up any large clumps, and drain on paper towels and allow to cool. While the sausage is cooking, whisk together the eggs, half and half, and 2 cups of the cheddar cheese until well combined. Add the sausage and cubed rolls to the egg mixture and transfer to a greased baking dish. Top the casserole with the remaining cheddar cheese, cover with foil, and refrigerate overnight. In the morning, preheat oven to 325 degrees and bake the casserole, covered, for about 35-40 minutes or until set and the cheese is melted. Serve hot.
