Mediterranean Flatbread
Ingredients:
- 1 package artisan flatbread, 11 x 9
- 1/4 cup sunburst tomatoes, halved
- 1/4 cup red onions, peeled, sliced
- 3/4 cup feta cheese
- 1 Sabra Caponata (eggplant spread)
- 1/4 grape tomatoes, halved
- 3/4 Sliced Hickory Smoked Boneless Ham, cut into 1/4 wide strip
- 1/4 arugula
Directions:
Heat oven to 375 F. Place flatbread on an ungreased baking sheet. Spread the caponata evenly over the flatbread. Top with tomatoes, onions, ham strips and feta cheese. Bake for 8-10 minutes or until cheese is melted. Top with fresh arugula, cut into 6 pieces. Serves 5
